Cruciferous Crunch Pasta Salad with Balsamic Chicken

This cruciferous crunch pasta salad with balsamic chicken is a big bowl of nourishment! With fiber rich carbs, lean protein, veggies, and my favorite store-bought pesto, this meal also fits into the Balanced Eating FOURmula.

Ingredients

  • 2 cups cruciferous crunch vegetable mix — I get this from Trader Joe’s, but the mix includes kale, brussels sprouts, broccoli, green cabbage and red cabbage

  • 1/2 red onion

  • 3-4 oz (1 chicken breast) balsamic chicken — check out my recipe here

  • 1/2 cup red lentil pasta (dry)

  • 2 tablespoons vegan kale pesto (any pesto works!)

Instructions:

  1. Boil water for pasta.

  2. Add red onion to a pan with olive oil. Sauté on medium heat until tender, about 5 minutes.

  3. Add cruciferous crunch mix to pan with onions, sauté until tender, about 2-3 minutes.

  4. Cook pasta

  5. Cut balsamic chicken into cubes. Add all cooked ingredients to a bowl and top with pesto. Enjoy!
